Gluten-free recipe Ingredients: 2 medium sweet potatoes (9 oz | 250g ) 16oz | 500g | 3 cups frozen peas 1 oz | 30g dairy-free butter 5oz | 150g | 1 cup leek or onion 1 garlic clove 5oz | 130g | 2 cups kale 8oz | 250ml | 1 cup vegetable stock or water Seasoning: 1tsp mixed dried herbs salt and black pepper to taste 1 bay leafCooking tips:Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour. Method: Peel and cut 4.6 oz (130g) or 2 medium-sized sweet potatoes. Place sweet potatoes in to a pot. Add water and pinch of salt. Bring to a boil and simmer until tender. Melt 1 oz | 30g dairy-free butter in a pan.As an alternative you can use olive oil instead. Chop 5 oz | 150g | leek or onion and add to the pan. Finely mince 1 garlic clove and add to the pan. Season with 1tsp mixed dried herbs and salt. Add 5oz | 130g | 2 cups kale, 16oz | 500g | 3 cups frozen peas, 8oz | 250ml | 1 cup vegetable stock or water and 1 bay leaf. Cook over medium heat for 5 minutes. Season cooked sweet potatoes with black pepper and dried herbs. Mash cooked sweet potatoes with potato masher or a fork. Remove the bay leaf and take the peas out of the pan. Leave the remaining liquid in the pan and add a bit of butter to it.
