Today, I m please to share with you a slow cooked lake caught perch and sunfish with sijan (also known as drumstick), green mangoes u0026 tomato. The small perch and sunfish (bluegill u0026 pumpkinseeds) were caught last year summer, which most of it were fried with this batch being curried. This is a surprisingly good curry you ll ever taste despite the type of fish used and the fine bones you ll encounter while dining on it. Nevertheless, it puts forward a savory and tangy taste with bold and exciting #Guyaneseflavors bursting through with each bite, while exhibiting soft flaky texture of both fish. The taste of the perch and sunfish gets better as you continue to dine on it because they absorb the intensity of all the aromatic spices u0026 herbs that mingles with the bunja masala mixture. The sijan (drumstick) and mangoes are both slowly cooked within the curry sauce to a soft texture, while the tomato lends a hand to add acidity to the curry. The texture within the sijan (drumstick) is soft u0026 tender and as you suck out (the only way to put this) the inner goodness, all is left is the out bark of the sijan. The mangoes adds a slight sourness and additional texture to the perch u0026 sunfish curry which my family and I dined on with rice. My homemade pepper sauce and lime achar are perfect for this dish, while adding spiciness to balance out sourness u0026 acidity. Thank you and enjoy!
