AKKI ROTI INGREDIENTS: * 1 cup Rice flour * 1/4 cup Carrot, grated * 1/4 cup Cucumber, grated * 1/4 cup Onion, chopped * 1/4 cup fresh Coconut, grated * 2 Green chilies, chopped * 1 tsp Ginger, chopped * 10 to 12 Curry leaves * 2 tbsp Coriander leaves, chopped * 1/2 tsp Ajwain * Salt, to taste * 1 tsp Cumin seeds * Water, as required * Oil, for cooking METHOD: * In a bowl, combine rice flour, grated carrot, grated cucumber, chopped onion,grated coconut, chopped green chilies, chopped ginger chopped, curry leaves, coriander leaves, ajwain, salt,cumin seeds and . Add water gradually and mix everything well until it forms a soft dough. * Take a small portion of the dough and shape it into a round ball. Place it on a banana leaf . Use your fingers to press and flatten the ball into a round shape. * Heat a tava (griddle) and spread some oil on it. Place the flattened akki roti on the tava and remove the banana leaf ,then cook until it s golden brown on one side. Flip the akki roti over and spread some oil on the other side. Cook until both sides are golden brown and crispy. * Serve the akki roti hot with chutney.
