Recipe:

Ingredients:

1 kg pork ribs (cut into pieces)
1 tsp baking soda
1 red onion (chopped)
1 white onion (chopped)
2 bell peppers (chopped)
3 lemons (juiced)
1 tsp salt
1 tsp white pepper
2 tsp sugar
1 tsp chicken bouillon powder
2 tbsp Chinese rice wine
1 tbsp sesame oil
1 tbsp oyster sauce
1 egg
2-3 tsp cornstarch
1 cup all-purpose flour
1 tsp cornstarch (for coating)
½ cup water (for sauce)
½ cup sugar (for sauce)
½ tsp salt (for sauce)
1 tsp oyster sauce (for sauce)
1 tsp soy sauce (for sauce)
1 ½ tsp cornstarch (for slurry)
Olive oil (for frying)
Crushed garlic (for stir-fry)

Instructions:

Prepare the Ribs:

Sprinkle baking soda over the ribs and rub in well. Let sit for 5 minutes to remove impurities, then rinse thoroughly.

Marinate the Ribs:

Season the ribs with salt, white pepper, sugar, chicken bouillon powder, rice wine, sesame oil, oyster sauce, and olive oil.
Crack in one egg and mix well. Add 2-3 tsp of cornstarch and mix until the ribs are evenly coated. Let marinate for about 2 hours.

Make the Lemon Sauce:

In a small pot, combine ½ cup of water, lemon juice, ½ cup of sugar, and ½ tsp salt. Add oyster sauce and soy sauce for extra flavor.
Stir in the cornstarch slurry to thicken the sauce. Simmer until the sauce reaches a nice, thick consistency.

Coat the Ribs:

In a bowl, mix flour and cornstarch for the coating. Dip the marinated ribs in the flour mixture to coat evenly.

Fry the Ribs:

Heat oil in a wok or frying pan. Fry the ribs in batches for about 1-2 minutes to form a light coating.
Remove the ribs, then increase the heat and fry them for an additional 8-10 minutes until crispy.

Stir-Fry with Vegetables:

In a separate pan, heat some olive oil and add crushed garlic. Stir-fry the chopped onions and bell peppers.
Add the fried ribs and pour in the lemon sauce. Stir to coat the ribs and cook for a few minutes.
